One Pan Sausage + Vegetables

Simple is the name of the game around here! This recipe is healthy, simple, quick, and will leave you with little dishes. AMEN!

This dish will serve about 2-4 people depending if you eat this alone or pair it with rice. You can add more vegetables such as red/green peppers, broccoli, zucchini, onion, mushrooms etc. Feel free to add more of what your like and subtract what you do not like. If you do add more, you may need to double the seasoning so you do have enough.

Ingredients:
1 Polish Sausage (there are different flavors that you can choose from)
4 Red Potatoes
1 small bag of baby carrots

Seasoning Ingredients:
4T olive oil
1 T garlic powder
1 T onion powder (if you are using onions above, you don’t need onion powder)
1 t Oregano
1 t Thyme
1 t Basil
1 t Parsley

Step 1: Line jelly roll with foil (easy clean up!) Preheat oven to 400 degrees F.

Step 2: Cut sausage. I cut the sausage into rondelles (looks like a coin) no more than 1/2 inch thick.

Step 3: Cut potatoes. I cut the potatoes into 1/2 inch slices and then into 6 pieces. It is important to make sure all your pieces are fairly uniform so they cook evenly.

Step 4: Empty your bag of carrots onto a paper towel. Then take another paper towel and blot the carrots dry.

Step 5: Mix olive oil and seasoning together in a small bowl.

Step 6: Put sausage and vegetables onto the pan. Then, drizzle the oil/seasoning mixture onto the vegetables/sausage. Next, use a rubber scraper to stir the vegetables/sausage to ensure an even oil/seasoning coating.

Step 7: Place the pan in the oven for 20 minutes.

Step 8: Remove pan and stir sausage/vegetables. Place back in the oven for 20 minutes.

Step 9: Enjoy!

I have had this dish alone or over rice with or without soy sauce. Either way is really good!
