Simple Baked BBQ Chicken

I am going to keep this short and sweet, because let’s be real… most people scroll past this to get right to the recipe. I wanted to give you all a simple recipe that included ingredients that are inexpensive and usually a staple in the kitchen. I love chicken, but it is all about the flavor for me.

As you make this recipe, keep in mind – you can really do whatever you want as far as seasonings go. You can wing it when it comes to cooking, that is pretty much how I make everything 🙂

REMEMBER: Wash your hands thoroughly each time after you come in contact with raw chicken. We are not trying to get food borne illness here (the teacher in me 🙂 ).

Step 1: Preheat oven to 400F degrees. Line your cookie sheet/jelly roll pan with foil. Hello! It is ok to be lazy and make cleaning easy!

Step 2: Lay your chicken out on the pan with space between each piece. You can use as much chicken as you want (you will just need more BBQ sauce). Cover each piece of chicken with about 1 Tablespoon of olive oil. Personally, I do not actually measure out the olive oil because that would create more dishes for me to wash and I am just not into that. So I just guesstimate 🙂

Step 3: Sprinkle chicken with salt and pepper to taste. Sometimes I will add garlic powder and/or onion powder too. Next, rub the olive oil and seasonings around each piece of chicken to make sure it fully covered.

Step 4: Place chicken in oven for 25 minutes.

Step 5: Remove chicken from the oven and turn the oven up to 425F degrees.

Step 6: Using a basting brush (or spoon, rubber scrapper) cover the chicken with BBQ sauce. TIP: I squeeze the BBQ sauce out of the bottle directly onto the chicken and then brush it on. Remember, I am not into washing dishes.

For steps 6 & 7

Step 7: Using tongs, gently wiggle (try not to tear the skin) the chicken from the pan and flip over. You can use a turner if you prefer. Cover this side with BBQ sauce.

Step 8: Return the chicken to the oven for 10 minutes.

Step 9: Repeat steps 6, 7, and 8 two more times. (Total bake time 55 minutes) The key: Each time I pull the chicken from the oven I baste both sides of the chicken with BBQ sauce. This gives the chicken more flavor and a thicker sauce when the chicken is finished. 🙂

Step 10: When the chicken is finished, some of the chicken/sauce will be blackened (see picture) and the internal temperature of the chicken will reach 165F.
