Protein Mug Cake

Happy Holidays everybody!! 🙂 I have been meaning to get this recipe on here for almost a week now but this time of year has just been a little crazy! The past few days have been busy with Christmas festivities and family time. Now I’ve got a few days here to get back to my normal routine before we head to eastern Iowa for our last Christmas! I can’t believe it is already almost the New Year. We spend so much time getting ready for this time of year and then it goes by SO fast! I wish Christmas was like a week-long, LOL.

Alright, so let’s talk about this recipe! If you follow me on Instagram, you probably know that protein mug cakes are one of my favorite snacks! 🙂 It’s a great way to curb a sweet tooth and get some protein in at the same time! I had a basic recipe I had been using for a while, but then one day I was trying to think of how I could utilize collagen in one of my meals instead of just drinking it. I have recently started taking a collagen supplement (about 8 weeks or so ago) to try it out and see if I felt it was worth it. This is the kind I use, I ordered from Amazon. I typically drink it with 20 oz. of water and some crystal light or add it into a smoothie/shake, but I was wanting something different so I thought I’d try to incorporate it into my mug cake recipe! And I feel like I hit the JACKPOT!! Using collagen in this recipe makes it perfect! When using protein in baking type recipes, you have to be careful that it doesn’t get too dry, and every protein brand is different so you just have to experiment. Well, I think the collagen helped to give it a moist brownie type texture and I LOVE it! So if you have these supplements on hand or are interested in trying them out, this is a super yummy and easy way to utilize them! So let’s get to how I make it! 🙂


These are the exact ingredients I use:

I get my protein from New Dawn Nutrition in Omaha and I ordered this collagen from Amazon. Like I said before, every protein powder is going to be different! I have found that the main things to pay attention to are the amount of milk and microwaving time. I use 1/4 cup of almond milk with this specific protein but have had to use more with other brands so I would recommend starting with 1/4 cup and then adding from there if needed. I would also recommend microwaving for ~45 seconds to start with and then go from there as well. You will need to watch closely the first few times and use a spoon to see if it’s done! I do this recipe for 90 seconds, but like I said every protein is different! So you just want to be sure that it doesn’t end up too dry. 🙂

STEP 1: Mix all dry ingredients together! Which includes 1/2 scoop protein, 1 scoop collagen, 2 T PB powder, 1 T. cocoa, 1/2 tsp. baking powder, and a dash of pudding mix.

*If you do not have collagen, then do a full scoop of protein instead of 1/2! The rest will be the same. EXCEPT: you may not need to microwave for as long, so watch that!

STEP 2: Add 1/4 cup almond milk and mix together until you’ve reached a good consistency. I also added it to a mug before I added the milk, you don’t necessarily have to add it to a mug! A bowl works just the same 🙂

STEP 3: Microwave for 90 seconds. Be sure to watch it and make sure it’s not getting too overdone!

STEP 4: Add your chocolate chips, a little whip cream, and some sprinkles if you’re feeling festive! 🙂 And there you go! Easy right? And a perfect winter treat!

MEAL PREP:

If you are like me and plan your meals out ahead of time, this is a super easy thing to prepare ahead of time OR just to have on hand when you’re craving something sweet! Just mix your dry ingredients together in a container or Ziploc bag and then all you have to do is add milk when you want to eat it!

Ingredients

  • 1/2 scoop protein
  • 1 scoop collagen
  • 2 T. peanut butter powder
  • 1 T cocoa
  • 1/2 tsp. baking powder
  • 1 dash sugar-free pudding mix
  • 1/4 cup unsweetened almond milk
  • 1 T. dark chocolate chips

Directions

  1. In a small bowl or mug, mix together all dry ingredients, except chocolate chips.
  2. Add almond milk and mix until consistent.
  3. Microwave for 90 seconds, or until done.
  4. Top with chocolate chips and whip cream as desired.
